Ahh! the plant of the stars and heaven above bringing us the elixir of light! Tequila is like wine there are many to choose from and many tastes.I had the pleasure to sample some artisan tequila. Made by small craftsmen distilleries (a group of farmers that have been allowed to for traditional generations and the preservation of cultural history) that sell to select restaurants, bars, and connoisseurs ...and not readily available to the general public. In Mexico's bigger cities, there are many places to find the artisan types...all dependent on the species of plant and the distilling process. I must say though some leave no trace of a hangover whatsoever...others are medicine if you have 1 or 2 shots hence my reference to "light"...more invites the "dark" demons. Agave is in perfect balance with the universe. A plant of beauty but the serrated edges will rip you apart and the sharp points of the leaves are like swords if you happen to stumble in that darkness!
